It has been revealed that the cake for the upcoming Royal Wedding will be made by Claire Ptak, owner of the Violet Bakery in London. Prince Harry and Ms. Markle have requested a lemon elderflower cake to incorporate the bright flavours of spring. It will be covered with buttercream and decorated with fresh flowers.
Whilst we will have to wait until the big day itself for the masterpiece to be revealed, we thought we would share a lemon cake recipe with you, just incase you fancy recreating and enjoying a slice whilst watching the wedding on TV!
- Half a cup of melted butter
- 1 cup of sugar
- 1 cup of icing sugar
- 2 eggs
- 1 cup of lemon juice
- Half a teaspoon of salt
- 1 & a half cups of flour
- 1 teaspoon of baking powder
- A splash of milk
Mix together the sugar and butter then add the beaten eggs and 1 tablespoon of lemon juice.
Add salt, flour, and baking powder to the mixture with a splash of milk.
Bake at 165°C in a well greased dish for around an hour, or until golden brown.
Once cooled, mix icing sugar and lemon and drizzle over the cake.
Enjoy with a cup of tea!
